I think any home cook can prepare the dough for this crispy treat—it's not complicated at all. But now I'll tell you how to make fried "khvorost" in a wok. You might wonder why specifically in a wok? The answer is very simple: a wok allows you to evenly fry the pastry while saving vegetable oil. Based on my personal experience, when making khvorost at home in a wok, you use almost 1.5 times less oil. 1) First, we need to grind the sugar into powdered sugar. We'll use part of it for dusting, and add one tablespoon to the dough. 2) Now mix water, vodka, one tablespoon of powdered sugar, salt, and egg in a bowl. Gradually add flour to this mixture and knead the dough until it becomes soft and elastic. 3) Roll out the prepared dough into a thin layer and cut it into diamonds or squares about 5 cm in size. Make a small slit in the center of each piece and pull one end of the diamond through the slit. 4) Next, pour vegetable oil into the wok and place it over the heat. When the oil reaches a temperature of about 200°C, add the first batch of khvorost and fry until golden brown. Remove the cooked pieces with a slotted spoon and place them on a wire rack to drain excess oil. Then transfer them to a plate and sprinkle with powdered sugar. Add the next batch to the wok.
