Thin crispy kipper on kefir

60 min4 serv.21 февр. 2026 г.

Description

Homemade treats for tea. When I make phyllo crisps, they don't always come out low-fat. This dish is definitely quite high in calories. I transfer the cooked crisps into a colander, and then onto paper towels. Only after that do I dust them with powdered sugar. And of course, tea helps offset the extra fat. These crisps will outshine any store-bought cookies. Serve with tea or coffee.

Instructions

  1. 1

    Step 1

    Step 1

Crack the eggs into a bowl—2 large ones or 3 small ones. Pour in a few tablespoons of kefir. Add a spoonful of sour cream, a pinch of salt, and a little sugar. You can omit the sugar entirely. In that case, simply add more powdered sugar at the end.

    Step 2

Beat the eggs with kefir, sugar, salt, and sour cream until smooth. Sift the flour and add it to the bowl. Now it's time to knead the dough. First mix it well with a fork, then knead with your hands.

    Step 3

    Step 3

Sprinkle the table with flour. Take a rolling pin. Roll out the dough, dusting it with flour to prevent sticking. Roll it as thin as possible. Then cut into wide strips with a knife. Make a slit in the middle of each strip. Turn the strips through the slits to form spirals.

    Step 4

We will need a frying pan with high edges. You can also use a saucepan or a deep fryer. Pour in refined sunflower oil and heat it on the stove. Add the pieces of dough and fry them on both sides.

    Step 5

During frying, the fry bread will puff up. This is normal. It will become airy yet thin. Place the fried bread on paper towels to drain excess oil. Finally, sprinkle it with powdered sugar. Serve with hot tea or coffee.
