Instructions
- 1
Step 1

Prepare the specified ingredients. You may use condensed milk of any type and any fat content.
- 2
Step 2

Put the condensed milk in a deep bowl, add the salt, pour in the lemon juice, and crack in the eggs. Be sure to add the lemon juice, otherwise the khvorost will taste too cloyingly sweet. Beat everything for 1–2 minutes.
- 3
Step 3

Add top-grade wheat flour and baking powder. Fold them into the mixture with smooth, gentle strokes.
- 4
Step 4

Knead a stiff, pliable dough that will stick slightly to your hands.
- 5
Step 5

Divide the dough into portions. Dust your work surface with flour and roll the portions of dough into round or rectangular sheets. Cut them into strips 2–2.5 cm wide. Then divide the strips into pieces so that you get rectangles. In the middle of each one, make a slit.
- 6
Step 6

Slide one edge of the piece into the slit and pull it out, twisting it as you go.
- 7
Step 7

Heat vegetable oil in a cauldron until it boils. Place the dough pieces into the boiling oil one at a time. They will rise to the surface and puff up literally a couple of seconds after you lower them in. Do not add them all at once; fry in batches.
- 8
Step 8

Brushwood browns very quickly, in 1–2 minutes, so don’t forget to flip it to the other side.
- 9
Step 9

Place the hot twigs on a paper napkin lining a plate. It will help remove excess fat. Then dust them with powdered sugar, if desired.
- 10
Step 10

Serve the golden-brown khvorost warm or chilled, with freshly brewed fragrant tea.
