
Cognac‑Flavored Fritters
Description
Homemade pastries for tea. The most famous Soviet homemade treat is khvorost! It was fried in every household and prepared for all holidays. But the most delicious version is khvorost with cognac; be sure to try making it and treat your relatives. Remember that such a dessert is always scarce, so make several portions so that there is enough for everyone. Serve it cooled or slightly warm.

Prepare the listed ingredients.

Crack the chicken eggs into a deep container, add the granulated sugar and salt, and beat thoroughly. At this stage you can add vanilla sugar or flavoring so that the fried dough is not only appetizing but also very aromatic.

Pour water and cognac into the container, whisk everything again, and add premium wheat flour. Knead a firm dough, leaving a little flour for dusting the work surface. Cover the dough with plastic wrap and let it rest for 20 minutes to activate the gluten.

Then divide it into pieces and roll each of them into a sheet no thicker than 0.5 cm. Cut the sheet vertically, and then horizontally, to obtain small rectangles.

In the middle of each rectangle, make a cut—but not all the way through—and fold one edge of the piece into the cut, then turn it back out. Perform the same manipulation with the remaining pieces.

Heat odorless vegetable oil in a cauldron or a non‑stick pot and drop 5–6 pieces into it. Do not add too many, as they will expand in size. Fry for about a minute on each side until golden brown. Remember that the oil should be almost boiling; proceed with caution!

Carefully lift the fried dough with a slotted spoon onto a plate or into a bowl and dust it with powdered sugar. As soon as it cools, it will become crisp and brittle.
