
Huplu
Description
I suggest preparing Khupla – one of the most wonderful dishes of Chuvash cuisine. Originally this pie was made with meat and grains, but nowadays grains are increasingly being replaced with potatoes. The filling contains meat – beef, goose or pork. Chicken meat can also be used. The dish turns out extraordinarily tasty, aromatic and juicy. Serve it warm or chilled. Perfect with tea.

Prepare the necessary ingredients.

First, let's make a sponge dough. Mix water with milk, add sugar, salt, and yeast. Stir. Gradually add a little flour. Bring the mixture to the consistency of liquid sour cream. Place the container with the dough in a warm place for about 30 minutes.

In a deep bowl, pour in about half a portion of flour. Add the egg.

Add the risen starter. Mix.

Gradually add the remaining flour and knead a soft dough. Gather it into a ball, cover with a towel, and place it in a warm spot for about an hour.

While the dough is rising, let's prepare the filling. Cut the potatoes, meat, and onion into small cubes. Add soft butter, salt, and pepper. Mix well. Don't skimp on the salt and pepper. The salt from the filling will later be taken up by the dough, so khuplu is traditionally seasoned more heavily than other pies.

The dough has risen and almost doubled in size.

Divide the dough into two unequal parts.

Roll out most of the dough into a circle about 5–6 mm thick, allowing for a rim of about 2–3 cm. Transfer the rolled-out dough sheet to a greased pan.

Spread the filling evenly on top.

Roll out the second portion of the dough to about 4 mm thickness and cover the filling with it.

Lifting the edges, carefully pinch the pie together by any convenient method. In the middle of the pie make a hole with a knife that should be at least 1.5 cm in diameter, otherwise it will close up. Place the dough in a warm place for 20–30 minutes to rise. Preheat the oven to 150 °C, put the pie in, and bake it for about an hour.

Then remove it and check the filling. If it turns out to be a bit dry, pour 2–3 tablespoons of water or broth through the round hole in the center. Return the pie to the oven, raise the temperature to 180 °C and bake until it becomes golden brown and the filling is cooked through. Brush the finished Huplu with water, butter, or vegetable oil. Cover with a towel and let it stand for another hour.
