Homemade Hummus

Description

This appetizer is quick and easy to prepare. It is popular in the East, especially in Arab countries and Israel. If you haven't tried it yet, I strongly recommend it. You don't have to buy it ready-made—you can make it yourself. Hummus is traditionally served with flatbreads, pita, and lavash, along with cheese and herbs. It is eaten cold. It can be served warm or chilled.

Instructions

    Step 1

    Transfer the tahini to the mixer bowl and pour in the lemon juice, mixing the contents for 60 seconds.

    Using a silicone spatula, scrape the mixture from the sides of the food processor bowl and transfer it to the center.

    Pour in 2 tablespoons of olive oil, add minced garlic, cumin, and 0.5 teaspoon of salt, whisk for half a minute.

    Open a can of canned chickpeas, drain them in a colander, and rinse thoroughly under running water.

    Transfer half of the chickpeas to a food processor and blend for 1 minute, then add the second half and blend for another 1–2 minutes, constantly scraping the mixture off the sides of the bowl.

    Add water to the food processor and process for 2-3 minutes until smooth.

    Transfer the hummus to a plate, drizzle with the remaining olive oil, and add a pinch of paprika.
