Hummus with Parsley
Description
The recipe won't take much time. Hummus is delicious either way: hot or cold. You can take this snack with you to work or on a trip, or to a picnic in a hotel container. Although hummus is very filling on its own, it is served with bread and bakery products.
Instructions
- 1
Step 1

Prepare the specified ingredients.
- 2
Step 2

Cover the chickpeas with warm water and let them soak for at least 2–3 hours, or even better — overnight. Then cook them for 2–3 hours, adding more water as needed. You can do this in a slow cooker or steamer, but it’s best to do it ahead of time so they have a chance to cool.
- 3
Step 3

Place the chickpeas in the bowl of a food processor or blender, add salt, ground black pepper, ground dried garlic, and cumin.
- 4
Step 4

Add the ground paprika to the bowl and squeeze the juice from the lemon slices, or use concentrated lemon juice diluted with water.
- 5
Step 5

Rinse the parsley in water and chop it finely. Add it to the bowl with the chickpeas, along with the tahini paste.
- 6
Step 6

Purée everything into a smooth consistency for about 4–5 minutes, adding olive oil to the container.
- 7
Step 7

Place the hummus on a plate and garnish to taste. You can mix ground paprika and turmeric with olive oil and drizzle it over the dish.
