
Homemade Pea Hummus
Description
A pea dish can also be served as a dip with croutons or chips, or with lavash—it is very filling and will perfectly satisfy your hunger. If you like, you can make hummus every day, since dried peas can be purchased inexpensively in stores. Serve with herbs and sauce.

Prepare the ingredients.

Buy dried split peas at a store or supermarket. Pour them into a deep bowl or salad bowl and rinse with water several times. Then boil water and pour boiling water into the container so it covers the peas by about a finger’s depth. Let sit for at least 2–3 hours; during that time the legumes will absorb the water and swell.

Rinse the soaked peas again and transfer them to a kazan or a saucepan with a non-stick bottom.

Add salt, pour in hot water, and place on the stove. Bring to a boil, skim off the foam that forms, and simmer over medium heat for about 1–1.5 hours until tender.

The boiled peas will absorb almost all of the liquid. If any remains, drain it into a bowl, but do not discard it.

Transfer the boiled peas to a deep container and purée with an immersion blender. If the mixture is thick, add a little of the cooking liquid reserved from boiling the peas.

In a separate bowl, mix the vegetable oil—preferably cold-pressed olive oil—with all the spices and seasonings.

Place the pea hummus in a deep bowl, make wells in the mixture, and pour the fragrant oil into them. Serve at the table; each person will mix the dish in their own bowl.
