
Bean Hummus

Prepare all the ingredients.

Soak the white beans in water for 8–10 hours beforehand. Then rinse the beans and drain in a colander.

Transfer the beans to a pot, pour in water, and bring to a boil.

Add a pinch of baking soda so the beans cook faster and turn out smoother in texture. Cook for about 1–1.5 hours until the beans are tender.

The cooked beans should mash easily into a puree with your fingers.

Drain the cooked beans in a colander and let the cooking liquid drip off. Save the liquid; you can add it to the hummus later.

Squeeze the juice from the lemon. Strain it through a fine sieve to remove the pulp and seeds.

Peel the garlic and chop it.

Transfer the beans to a blender. Add all the spices, salt, garlic, olive oil, lemon juice, and tahini.
