Prepare all the ingredients.

Soak the chickpeas in advance in water for 6-8 hours. It's more convenient to do this overnight.

After draining the water, rinse the chickpeas and transfer them to a pot. Pour in clean water and bring to a boil. Add a pinch of baking soda so the chickpeas cook faster and become softer. Cook the chickpeas for about 60–90 minutes over medium heat.

Then drain through a sieve. Save the liquid the chickpeas were cooked in as well.

Dry-toast the coriander in a dry skillet to release its aroma. Then grind it in a mortar until powdered.

Squeeze the juice from the lemon. Strain it through a fine-mesh sieve to remove seeds and pulp.

Peel the garlic and slice into thin slices.

Transfer the boiled chickpeas to the blender bowl.

Add the remaining ingredients. Blend everything until smooth.
