
Crispy Fried Onions
Description
It works both for a holiday and for everyday meals. For preparation, white onion is best—it is less bitter and pungent in taste, but if you don't have that variety, yellow onion will work too. Choose breadcrumbs that are not whole-grain, so the dish will be more golden and fluffy. The appetizer is ready. Serve immediately.

Prepare the specified ingredients.

Peel medium-sized onions, rinse them in water, and slice into rings 0.5 cm thick—no thinner!

Beat the chicken egg into a bowl, season with salt and pepper, and whisk. Pour the breadcrumbs into another bowl. Dip the onion rings first in the egg mixture, then in the breadcrumb mixture.

In a kazan or saucepan with a non-stick bottom, heat the vegetable oil until it boils, and only then add 2–3 rings at a time to the oil, frying until done for about 1–2 minutes. In unheated oil, all the batter will fall off the rings and the oil will smoke!

Line a plate with paper towels and transfer the fried rings onto them with a slotted spoon to remove excess fat.
