
Crispy wings

Prepare the ingredients. Thoroughly wash the chicken wings, trim off the sharp tip at the joint (you won't need it), and dry with a paper towel.

Put 30 g of starch into a bowl with the wings and mix well.

Place them on a rack and leave for 15 minutes. The starch will be absorbed and the wings will dry out.

Prepare the batter for frying chicken wings. To do this, combine flour, starch, spices, salt, and baking powder in a dry container. Mix well with a whisk. Add water and whisk until smooth. The result should be a uniform, not too thick mixture.

Dip the wings into the batter in batches.

Heat the vegetable oil until boiling. I didn't specify the amount, but make sure the wings are completely covered with oil so they fry evenly on all sides. Fry several wings at a time for 8 minutes.
