
Crispy lavash envelopes with filling
Description
Perfect with the meal and with drinks. What won't you come up with to treat your family and loved ones! This recipe features an original hot lavash appetizer. Anything can serve as a filling for these envelopes: vegetables, ground meat, meat, or mushrooms. If you don't want to fry the envelopes too much, stop when they reach a light golden color. The filling is already cooked, and lavash can be eaten as-is. I recommend serving this appetizer warm with red sauce — you'll love it.

1. Cut the eggplants into small cubes, salt them, and let sit for 15 minutes. Rinse the eggplants under cold water to remove the bitterness. Finely chop the mushrooms and onion.

2. In vegetable oil, sauté the onion until lightly golden. Add the mushrooms and eggplant and cook over medium heat for 10 minutes, stirring occasionally.

3. Season the filling to taste with salt and pepper. Cut the lavash into squares. Stack two squares together and place the filling in the center. Fold into an envelope.
