Aspic from a Home-Raised Rooster

Description

The appetizer is prepared quickly and simply. Any homemaker can make crystal aspic from a home-raised rooster. Such a dish is considered a cold appetizer and is served to taste with various sauces (ketchup, mustard, adjika, etc.). It requires a minimum of 10 hours to prepare, after which the aspic must set in the refrigerator.

    1. In our family, we love aspic very much, and with the addition of home-raised poultry it turns out amazingly delicious. Combined with turkey and pork, this dish will become indispensable at any holiday table.

    2. Before you put the meat on to boil, the pork knuckle should be thoroughly prepared. To do this, scrape it with a knife and, if necessary, hold it briefly over the flame. Then put it on to boil together with the domestic rooster. I had a quarter portion. For the amount of meat specified in the recipe, you will need 7-8 liters of water. That is why you will need to use a deep pot.

    3. When the meat comes to a boil, skim off all the foam and add spices to taste. For the aspic to turn out crystal-clear, the meat should simmer, not boil. So adjust the heat so the meat simmers for about 5 hours. Then add the turkey and simmer for another 2 hours. Midway through cooking, add dried vegetables or fresh onion and carrot if desired.

    4. Transfer the cooked meat to a separate plate, then you can work on the broth.

    5. Thanks to the high ratio of meat to water, our broth does not need gelatin added. If you have less meat, you must add gelatin. When the meat has cooled, you will need to carve it.

    7. Line the bottom of the molds into which you will pour the aspic with a little garlic, ground pepper, and spices (if you did not add them to the broth). Mix the carved meat well and layer it into the molds in portions.

    9. After the specified time, the aspic can be removed from the molds, though you can also eat it straight from them. To remove it easily, briefly heat the mold in hot water (no more than 2 minutes), then invert the mold onto a plate and lift it off.
