Aspic in a Multicooker-Pressure Cooker

240 min4 serv.21 февр. 2026 г.

Description

Suitable for both holidays and everyday meals. If desired, you can add a hot pepper pod to the broth while cooking, so that once set, the aspic is cold and fiery at the same time. The dish must be served with something sharp and pungent: mustard, horseradish, or pickled hot peppers. The aspic can be stored in the refrigerator for about 3 days. Serve with herbs and sauce.

Instructions

  1. 1

    Step 1

    Step 1

    Prepare the specified ingredients.

  2. 2

    Step 2

    Step 2

Rinse the pork trotters, place them in a deep roasting pan or gastronorm container, pour boiling water over them, and leave for 10–20 minutes, turning occasionally.

  3. 3

    Step 3

    Step 3

Scrape the dirt from the skin with a sharp knife, especially around the leg joints, rinse in water, and place in the slow cooker bowl. Add salt, black peppercorns, and bay leaves.

  4. 4

    Step 4

    Step 4

Pour hot water into the bowl, activate the "Pressure Cooker", "Aspic" mode on the display for 1.5 hours. Close the appliance with the lid and go about your business.

  5. 5

    Step 5

    Step 5

After the specified time, add peeled and washed carrots and onions to the bowl. If desired, you can sprinkle in a little meat or poultry seasoning—to taste. Cook the contents of the container for another 30 minutes.

  6. 6

    Step 6

    Step 6

During this time, the legs will cook through completely and the meat will fall off the bones. The appliance will give you an audible signal when cooking is finished.

  7. 7

    Step 7

    Step 7

Carefully transfer the drumsticks to a plate with a slotted spoon, and strain the broth.

  8. 8

    Step 8

    Step 8

Separate the meat and skin, and place them in deep serving dishes together with the boiled vegetables and fresh herbs. You can boil and peel the chicken eggs in advance, slice them into rings, and arrange them with the meat.

  9. 9

    Step 9

    Step 9

Pour in the strained meat broth, but not all the way to the top. Garnish with fresh herbs and let the dish cool to room temperature, then refrigerate for at least 1.5 hours. Because the trotters release a lot of gelatin during cooking, the aspic will set quickly in the cold!

    Step 10

Once set, serve this traditional Russian dish with mustard or beet horseradish.
