Description

The recipe won't take much time. You can make aspic from any meat. It can be not only chicken with turkey, but also pork and beef.     Wash the chicken and turkey well and place them in a large pot.

    Pour water into a pot and place it on the stove.

    Bring the contents of the pot to a boil, reduce the heat, and skim off the foam. Cook the aspic over the lowest possible heat so the broth barely bubbles. This way it will turn out clear. After two hours of simmering, add the peeled onion and carrot, and the bay leaf.

    Continue cooking the kholodets for another hour to an hour and a half; season with salt and pepper to taste.

    Remove the boiled meat from the pot.

    And strain the broth. Pour 3–4 tablespoons of cold water over the gelatin. Let it soak for 10 minutes. Add it to the hot broth and stir until the gelatin is fully dissolved.

    Remove the skin, sinew, and bones from the turkey and chicken meat. Only the flesh should remain. Finely chop the meat and add crushed garlic.

    Pour the meat with broth containing gelatin. But keep in mind that this is not a regular aspic. So do not pour in too much broth.

    Mix the meat, garlic, and broth.

    Thoroughly wash a one-liter milk bottle and cut off the bottom. Place the bottle vertically, cap side down, in any tall container. Fill the bottle with aspic all the way to the top.

    When the aspic in the bottle has set, carefully cut open the bottle and transfer your "little pig" onto a plate. Pour cold broth into the plate and return it to the refrigerator.

    When the broth has cooled, decorate the aspic to taste. I use snowflakes made from white radish and carrot, and parsley. From the sausage, make ears, a snout, and a tail. From the pepper, make eyes.
