
New Year's Aspic

The recipe won't take much time. You probably have a question—how does New Year's aspic differ from the regular kind?:) Regular aspic is a more everyday dish, not of the same high quality and level as the New Year's version. It's hearty and quite tasty, but falls a bit short from an aesthetic standpoint. New Year's aspic, on the other hand, is made only from very good meat; it turns out lean and perfectly clear—exactly what you need for a holiday table. Right away I want to point out that for kholodets to turn out tasty, you need fresh meat. In this recipe for making New Year’s kholodets, beef shank is used (with the bone — that’s important too)...

Take a large pot, put the meat in it, and cover with water (about 3 L). Bring it to a boil, then reduce the heat to the lowest setting and simmer the meat for 6 hours without a lid. The heat should be very low—the broth should barely bubble. Yes, simmer for exactly 6 hours; that’s not a typo :)

Let's peel the onion and carrot.

When one hour remains until the meat finishes cooking, add the carrots and onion (whole) to the pot, as well as a bay leaf and allspice berries. At this stage, the meat should also be salted to taste.

So, the meat is done cooking. Transfer it to a plate and separate it from the bones (the meat cooked for a long time, so the bones will come off easily).

Take a wide shallow pan and place our meat in it, shredded into fibers.

Sprinkle the meat with finely chopped garlic (chopped, not grated on a grater — the garlic should be noticeable).

Strain the broth in which the meat was boiled. Pour it over the meat.

If desired, garnish the aspic with pieces of carrot boiled together with the meat. Let the aspic cool to room temperature, then refrigerate for a few more hours until set.

Remove the fat that has formed, cut the aspic into small pieces, and serve with horseradish or mustard. Enjoy!
