Perfect for the table and for drinks. "Like Grandma's" aspic is not only delicious, but also very beneficial for those who suffer from joint inflammation, osteochondrosis, and arthritis. It is the gelling substance contained in pig's trotters that helps the dish set and favorably contributes to recovery. Therefore, aspic should be eaten more often.

Step 1

Prepare the listed ingredients. Scrape the pig trotters clean of dirt and scald them with boiling water. Rinse them several times in water. Trim the sinews and membranes from the beef. Peel the onion and carrots and rinse them.

Place the cleaned pork trotters, beef, and vegetables in a pot with a non-stick bottom or a kazan. The vegetables can be cut into large pieces or left whole — they are needed to give the broth aroma and flavor.

Pour hot water into a saucepan and place the pot on the stove. Bring to a boil and skim off the foam that forms. Reduce the heat and simmer for about 3–3.5 hours until the legs are very tender. Add salt, pepper, and bay leaves.

After the specified time, both the beef and the legs will be ready, and the broth will turn out rich and fatty.

Separate the boiled beef into shreds and place it in the aspic container together with the carrots.

Remove the meat from the pork shanks and place it in the container with the beef. Strain the broth.

Pour the broth into a container and add the dill and parsley. Place the aspic in the refrigerator for 2–3 hours to set.

Serve the set aspic with bread, beet horseradish, or mustard.
