Description

A delicious appetizer for any gathering. Poultry makes excellent aspic—whether chicken or duck. Duck aspic is less fatty. To make duck aspic, we'll need to use gelatin—the broth doesn't always turn out fatty enough, even though duck isn't as lean as chicken. Green peas in aspic are a matter of taste, but I like them, and they look bright. Read the recipe. The appetizer is ready. Serve immediately.
