
Pork Trotter and Chicken Aspic
Description
1. First, thoroughly clean and rinse the pork trotters. 2. Wash the chicken, cut it up after removing the skin, and place it in a large pot together with the trotters. 3. Add water and put it on the heat. 4. Rinse the onion and drop it into the pot. 5. After it comes to a boil, carefully skim off the foam that forms. 6. On low heat, aspic made from pork trotters and chicken at home should simmer for at least 4 hours. 7. Peel and wash the carrots and prepare the spices. Add them to the pot along with salt and let it cook for another 1 hour. 8. Carefully remove the meat, let it cool slightly, and pick it apart, separating it from the bones. 9. Prepare molds and place the meat on the bottom. 10. Strain the broth 2–3 times to remove not only leftover spices but also excess fat. 11. In this pork trotters and chicken aspic recipe, the carrot is not used, but you can slice it into rounds and place it in the mold. You can also use your favorite herbs for garnish. 12. Pour the strained broth over the meat in the mold and refrigerate. That’s the entire simple version. It can be served warm or chilled.
