
Pork and Chicken Aspic
Description
Perfect for the table and with drinks. 1. First, soak the pig’s trotters and chicken in cold water—in separate bowls, of course. Keep them in cold water for about one hour. 2. Then put them to cook in separate pots. 3. Add yellow onion to both pots. Divide it evenly. 4. When the water boils, skim off the foam and add pepper. Divide that evenly too. 5. The meat is ready. Separate both the chicken and pork from the bones. Remove the skin. 6. Strain both broths and mix them together. 7. Run the chicken and pork through a meat grinder together with the garlic. 8. Then spread the meat into aspic molds. 9. Pour the broth over it. 10. Refrigerate to set for at least 4 hours. When you combine both broths, you get a pleasant, delicate aspic. Chicken and pork go well together. Serve with fresh herbs. It can be served warm or chilled.
