
Aspic from Drumsticks
Description
A delicious appetizer for any gathering. This recipe yields a wonderful, tender aspic. If you like, you can run the meat through a meat grinder—the aspic will become even more tender and airy. If you have always been interested, serve the appetizer at the table.

Pour water into a pot. Add the chicken, peeled onion, carrot, and garlic. Add the spices. Cook for about 3–4 hours.

Take out the meat and chop it finely. Discard the onion; you can keep the carrot and add it to the aspic later. Strain the broth through a sieve. Let it cool.

Decorate the aspic mold with greens and carrot rounds. Place the meat on top. Put the broth on the stove and add the gelatin. Heat the broth and mix thoroughly.

Pour the broth into the mold. Place the plates in the refrigerator until the aspic is fully set.
