Rinse the meat: the chicken and pork trotters. Chicken thighs, drumsticks, and wings are ideal for this recipe. If you buy a whole chicken, cut it into pieces. The pork trotters should be thoroughly cleaned. Cover the meat with cold water and set it to cook over heat. After the water comes to a boil, salt the broth and skim off the foam.

Cook the aspic over medium-low heat (not the lowest) for 1.5 hours, with the pot covered. Then add peppercorns, a bay leaf, peeled carrots, and well-washed onion in its skin to the meat. The broth will take on a more attractive color from the carrots and onion. Continue cooking the aspic with the vegetables for another 20–30 minutes. Remove the cooked meat from the heat.

Separate the meat from the bones. Place the meat in containers and pour the broth over it. Strain the broth through a sieve or cheesecloth when pouring. Put the aspic in the refrigerator for 3–4 hours.
