
Chicken and Beef Aspic
Description
The recipe won’t take much time. Aspic is a very tasty appetizer. Of course, it takes a long time to prepare, but I think it’s worth it. You can decorate aspic however you like. For example, add a little corn and peas; you can add herbs, parsley or dill; you can also add pieces of bell pepper. The result is an amazingly beautiful dish. Making aspic according to my recipe is very simple. Give it a try.

Step 1

Pour water over the chicken and beef so that it covers all the meat. Simmer the meat in a pot over low heat for about 2–3 hours. Then add the peeled carrot and onion (you can leave the onion unpeeled, but be sure to wash it thoroughly), garlic, and spices; I used caraway, salt, and pepper. Cook for another hour.

After the broth is ready, let it cool slightly and strain it through a culinary sieve. Chop the boiled vegetables and garlic. Remove the meat from the bone and mash it with a fork to make small pieces.

Place the meat on the bottom of the aspic mold, decorate it with carrots, add garlic and a few peppercorns, and you can garnish it with herbs.

Pour broth into the mold; you can add a little vinegar if the broth turned out very cloudy. Let the mold with the aspic cool, then place it in the refrigerator for two to three days.
