
Beef and Pork Trotter Aspic
Description
This recipe won't take much time. Here is a recipe that explains how to make aspic from beef and pork trotters. If you follow all the steps described above, the aspic should turn out fairly clear and hold its shape well. I recommend serving it with mustard or horseradish. Good luck. Thoroughly wash the legs and scrape them with a knife if necessary. Soak in cold water for 2 hours, then rinse again. Place all the meat in a pot, cover with cold water, and bring to a boil over low heat, skimming off the foam.

Drain the water. Rinse the meat and the pot it was cooked in. Cover it with water again, adding enough water so the meat is covered by 6–7 cm. Bring to a boil over medium heat. Reduce the heat to low, add the onion, and cook for 2 hours.

Remove the beef and shred it into strands. Continue simmering the broth for another 3 hours over the lowest heat.

Now remove the legs, shred them into fibers, and arrange in the molds. Strain the broth through a sieve, add bay leaves, black pepper, garlic, and salt to taste. Simmer for another 40 minutes. Pour the boiling broth over the meat.

Let the meat molds cool completely, then refrigerate overnight to set. In the morning, your aspic will be ready.
