
Beef and Chicken Aspic

Suitable for both holidays and everyday. Interestingly, the appetizer is ready. Serve immediately.

Step 1

First, prepare the meat. Wash it and place it in a pot. Cover with ice-cold water. Add a whole peeled onion, garlic, ginger, and salt. Cook the aspic over low heat for eight hours, no less. Beef aspic broth will have a brown tint and a rich flavor. Once the meat is cooked, strain the broth and remove all the bones from the meat.

Arrange the meat in small bowls, add fresh garlic and ginger. Pour strained broth over it and refrigerate to set for at least two to three hours.

If you want the aspic to set faster, add a little food-grade gelatin to the broth. It will not affect the taste of the dish at all. Serve the finished aspic with herbs, as well as with horseradish and mustard.
