
Wild Boar Aspic
Description
If we talk about the process itself, the recipe for making aspic from wild boar is very similar to any other. And the taste, make no mistake, will exceed all your expectations! 1. First, wash the meat thoroughly under running water. 2. Place it in a pot, cover with clean water, and put it on the heat. 3. After it comes to a boil, you can add salt to taste. During cooking, be sure to skim off the foam that forms so the broth stays clear. 4. While simmering, you can add an onion, carrot, bay leaf, and any spices you like to the pot. 5. Wild boar aspic made at home should simmer over the lowest heat for at least 7–9 hours. 6. Afterward, carefully remove the meat and let it cool slightly. Separate it from the bones and chop it if desired. 7. Place the meat in the bottom of prepared molds. 8. Strain the broth a couple of times, pour a little into a glass, and dissolve the gelatin in it. 9. Let it swell a little, then combine it with the remaining broth and mix thoroughly. 10. Pour the broth into the molds and carefully place them in the refrigerator until fully set. 11. If desired, garnish with a sprig of greens or a piece of carrot, for example. It can be served warm or chilled.
