
Aspic from Lamb Shanks
Description
A delicious appetizer for any gathering. 1. First, prepare the meat components — the legs and the meat. Wash them thoroughly and place them in a deep pot. 2. Put the pot on the stove and simmer over low heat until the meat separates from the bone. 3. After a couple of hours, add peeled onion and carrot to the pot. 4. When the meat is fully cooked, grate the garlic on a fine grater and add it to the broth. Remove the pot from the heat and leave it covered for 25–30 minutes. 6. Now prepare a sieve and strain the broth, having first removed the meat and vegetables. 7. Separate the cooled legs and other meat ingredients and arrange them on the bottom of prepared molds. 8. Pour in the strained broth. If desired, garnish with thin carrot slices, herbs, etc. When the homemade lamb trotters aspic has cooled slightly, carefully place the molds in the refrigerator to set. The appetizer is ready. Serve immediately.
