
Aspic (Quick Recipe)
Description
Perfect with meals and drinks. Serve the finished aspic with mustard or horseradish. If you don't like pork trotter meat, you can use beef broth and add several pork trotters to help the broth set. Like beef trotters, pork trotters can have a distinctive smell, so many cooks use pork knuckle or turkey shoulders instead. Broth made from these also sets well. If you prefer poultry, substitute beef or pork to taste. Serve with fresh herbs and sauce.

Cut the legs at the joints, chop the large bones, place them in a pot, and pour in 5 liters of water so the water is about 3 fingers above.

Bring the water in the pot to a boil, skim off the foam, and reduce the heat so the water barely simmers. Cook for 2.5–3 hours.

Put the parsley root, pepper, bay leaf, peeled carrots, and onion into the broth 1 hour before it is done.

When the legs are cooked, remove them from the broth and let them cool, then separate the meat from the bones.

Chop the garlic and add it to the broth, season with salt, bring to a boil, remove from heat, and let cool for about 20 minutes.

Place the meat in aspic molds, pour the strained broth over it, and refrigerate for 6 hours.
