
Kholodets without gelatin
Description
Suitable for both a holiday table and everyday meals. Aspic looks simply wonderful. I make it without gelatin, but using a homemade chicken, and it is very fatty, so the broth turns out very rich and therefore sets well in the refrigerator. Serve the aspic with a piece of bread and horseradish. You can sprinkle the aspic with fresh herbs. You can make aspic for a holiday or simply for dinner or lunch with the family. You can serve it warm or chilled.

Step 1

Wash and peel the carrots, garlic, and onion. Dry them. Pour water into a pot and bring it to a boil. Then add the meat and spices and cook for about 2–2.5 hours. Then add the vegetables and cook for about 1–1.5 hours more.

After the broth is ready, strain it through a sieve to separate it from the pieces of vegetables and spices. You can use the remaining onion and carrot as decoration, or you can choose not to use them at all. For decoration you can also use herbs or a boiled egg, but that’s up to you. Remove the meat from the bone and place it on the bottom of the mold, first cutting it into small pieces.

Also place the herbs, carrot, and a boiled egg cut in half into the mold. Then pour the broth into the mold. And leave it in the refrigerator for 2–3 days. After that, take the aspic out of the refrigerator and taste it.
