
Aspic
Description
Suitable for both festive occasions and everyday meals. "Assorti" Aspic is a festive appetizer that turns out tasty and nourishing. For this aspic, use three types of meat—chicken, pork, and beef. Use meat on the bone—you can take drumsticks and part of a shank. Also take pig's trotters—with them, the aspic will always set and won't be runny.

Prepare all ingredients.

Wash the meat thoroughly, place it in a pot, and cover with cold water.

Over medium heat, bring the broth to a boil. Then reduce the heat to the lowest setting and simmer the aspic for 2.5–3 hours. Next, add a peeled whole carrot and a well-washed onion in its skin. Also add a bay leaf and peppercorns. Simmer the broth for another 30 minutes. The vegetables will give the broth a beautiful golden color, and the spices will add extra aroma. The meat will cook through completely.

Separate all the meat from the bones. Place the meat in containers and pour strained broth over the top. Refrigerate the aspic for a couple of hours until it sets.
