
Strawberry Bread Muffins
Description
Homemade baked goods for tea. These tender muffins are made from ordinary white bread and ready in just 30 minutes. The baking is done. Serve at the table.

1. Preheat the oven to 175 degrees. In a small saucepan, melt the butter over medium heat. Once the butter has melted, reduce the heat to low. Cook the butter, stirring frequently, until it turns brown and develops a nutty aroma. Watch it carefully and do not leave it unattended! The butter can burn in as little as 1 minute. Remove from heat. Lightly brush each muffin cup with some of the butter, then sprinkle with sugar. Trim the crusts off the bread slices.

2. Using a rolling pin, roll each slice of bread thinly. Brush both sides with browned butter, then carefully place into the mold compartments.

3. Mix brown sugar, lemon zest, salt, and breadcrumbs in a bowl, then add chopped strawberries and stir to combine. Stir in the remaining browned butter.

4. Place the strawberry mixture onto the bread slices. Cover the baking dish with foil and bake for 15 minutes. Then remove the foil and bake for another 10 minutes, until the strawberries become very soft.

5. Let cool for 5 minutes before removing from the pan. Serve the cupcakes warm or at room temperature, garnished with whipped cream.
