
Gluten-free millet crispbreads

Prepare all ingredients.

Pour boiling water over the millet and leave for 3 hours.

After that, drain the water and rinse the grain thoroughly. Transfer to a sieve and let the excess liquid drain off.

Transfer the millet to a blender, pour in water and olive oil. Add salt, ground black pepper, and nutritional yeast.

Peel the carrots and grate them on a medium grater, dice the onion into small cubes, and finely chop the parsley and dill.

Combine the prepared ingredients in a bowl and pour in the liquid millet batter. Mix everything well.

Spread the resulting mixture evenly on a silicone or Teflon mat. Alternatively, grease a baking sheet with vegetable oil. You can lightly spray the dough with olive oil on top. Bake the flatbreads in an oven preheated to 190°C for 40–50 minutes until golden.
