
Bread in the Oven
Description
Homemade baked goods for tea. For light, porous bread, don't overwork the dough with flour! Its consistency should be sticky and well kneaded. Don't forget about proofing — there should be at least two rises, with the last one directly in the pan. If desired, you can mix various spices and seasonings into the dough: dried ground garlic, fried onion, vegetable seasoning, etc. This will give the baked goods an unforgettable taste and aroma. Serve with tea or coffee.

Prepare the listed ingredients. Fresh yeast can be replaced with dry yeast at 5–6 grams. Warm water can be replaced with milk of any fat content.

Pour warm water into a deep bowl. The water temperature should not exceed 35 degrees, otherwise the yeast will not activate. Add the sugar and salt, the seasoning, crumble in the fresh yeast, and mix everything thoroughly. If using dry yeast, add it together with the flour.

Add 120–150 grams of premium wheat flour and knead the sponge — it should be sticky.

For the flour to blend into the liquid well, a whisk is best.

Pour the sponge into a tall bowl and cover with a towel. Leave in a warm place for 15–20 minutes. Watch it closely, as the yeast will rise vigorously.

Then pour in the vegetable oil and mix it into the sponge. Add the remaining flour in portions and knead thoroughly until you have a sticky dough that clings to your hands. You will need 10–12 minutes for it to become less sticky.

Line the pan with parchment paper and spray it with vegetable oil. Place the dough in the pan and gently round it. Cover with a towel and let rise for 20–40 minutes, depending on room temperature.

After the specified time, the dough will rise to the edges of the pan. Preheat the oven to 240 degrees and place a tray of boiling water on the bottom. Set the pan with the dough on the middle rack and bake for 20 minutes with steam.

Then reduce the heat to 200°C and bake the bread for another 15–20 minutes. Remove it from the oven and let it cool in the pan.

Slice the bread and serve it at the table with various appetizers and pâtés. Enjoy your meal!
