Bread in an air fryer

Description

Delicious baked goods for the whole family. My bowl is 4 liters, so in the air fryer I can only bake a small loaf weighing about 400 grams. The finished bread turned out with a crispy, very tasty crust and baked through perfectly. The crumb is fine-pored, very similar to the crumb of pure rye bread. I didn’t add anything to the dough, but caraway or ground coriander would be wonderful—optional. The power of your air fryer will affect the baking time, so after 30 minutes of baking start peeking into the bowl and checking—the surface of the finished bread should be golden brown, not scorched. Serve warm or chilled. Perfect with tea.

    Lay out all the ingredients on the kitchen table.

    In a large bowl, rub the yeast between your fingers and add the sugar.

    Pour in the warm water and whisk vigorously until the yeast is completely dissolved.

    Sift the wheat flour into the yeast mixture.

    Whisk these ingredients with a whisk until smooth and even—this is the sponge. Cover the bowl with a kitchen towel and leave it in a warm place for 30 minutes to proof.

    After half an hour the preferment had matured—it had increased in size and developed a bubbly structure.

    Now add all the rye flour.

    Knead a smooth dough that does not stick to your hands. If necessary, add wheat flour gradually until the dough reaches the right consistency. Then work the salt into the dough.

    Round the finished dough and place it in the air fryer basket on the lower rack, which should be lined first with baking parchment. Lightly dust the bread loaf with rye flour; I also made a crosswise slash with a sharp knife blade so the surface of the baked bread wouldn’t develop chaotic, unsightly cracks. Put the basket with the loaf inside the air fryer for 1 hour with the appliance switched off.

    After an hour the dough has risen and the bread is ready to bake. Put the bowl with the bread back into the air fryer and run the appliance as follows: 15 minutes at 200°C, then 30 minutes at 180°C.

    Cool the finished bread completely on a rack and serve at the table.
