Description
Homemade baked goods for tea. Everyone who thinks about healthy eating or watches their figure starts giving up bread. However, you don’t have to if you eat healthy bread, for example, one like this, made with a sour rye starter, without yeast, using rye and spelt flour. The recipe is simple, follow the step‑by‑step instructions and bake healthily. Serve warm or chilled. Perfect with tea.

Prepare the ingredients.

Pour water into the mixing bowl, add salt, sugar, rye starter, honey, malt extract (or kvass wort), and stir.

Add spelt flour (or wheat flour).

Stir well until the mixture is smooth and homogeneous.

Add the sifted rye flour.

Add 2 tbsp vegetable oil.

Knead the dough. If the dough seems too dense, you can add water, and vice versa. Gather the dough into a ball, cover it with plastic wrap, and place it in a warm spot for 3–4 hours to ferment.

Place the risen dough on a work surface of a table dusted with flour.

Shape the bread into any shape you like: round, oval, or loaf‑shaped. Let it rise for 1 hour, covering the top with a towel or plastic wrap.

Bake the bread for the first 10 minutes at 240 °C, then lower the temperature to 180 °C and bake for another 45–50 minutes. Cool the finished bread completely on a rack. Slicing the bread at this time is not recommended, as the baking process is not yet finished and the crumb is still forming.
