Prepare all ingredients.

Pour psyllium powder into room-temperature water. Stir with a whisk and let it sit for about 5–10 minutes. It should absorb the water and turn jelly-like.

In a separate deep bowl, mix all types of flour, baking powder, baking soda, and salt.

Then add the psyllium powder that has swollen and absorbed the water.

Then mix all the ingredients.

Place the resulting dough on a floured surface. Knead the dough thoroughly until smooth and shape it into a ball.

With damp hands, shape the bread. Place it on baking parchment or use a loaf pan; it’s best to line the pan with parchment.

Moisten the top of the loaf, sprinkle with pumpkin seeds and press them in lightly. Bake the bread in an oven preheated to 180 degrees for 45–50 minutes.
