
Sourdough Bran Bread

Homemade pastries for tea. Making tasty and healthy sourdough bread with bran is quite simple if you follow the step-by-step recipe. After such bread, you won't want to eat bread from an ordinary store. It can be served with tea or coffee.

Prepare the ingredients for kneading the dough. By this time, the sponge should be ready; prepare it 10–12 hours before kneading the dough.

To prepare the poolish over 10–12 hours (preferably starting in the evening), have ready 20 grams of wheat starter, 110 grams of water, and 110 grams of wheat flour.

Mix water, wheat starter, and flour. Cover with plastic wrap and leave at room temperature to ferment for 10–12 hours.

The sponge should look active by the time you knead the dough; you will need 200 grams of it.

Pour 130 grams of room-temperature water into the dough mixing bowl, add 200 grams of starter, and mix.

Pour in the bran, add honey, salt, and vegetable oil.

Pour all the flour into a bowl and mix.

After mixing all the ingredients, cover with plastic wrap and let rest for autolyse for 40–60 minutes.

After autolysis, knead the dough by hand until smooth and shape into a ball.

Grease a bowl with vegetable oil. Leave the dough to ferment at room temperature for 4 hours, covering the top with plastic wrap and a kitchen towel.

After 2 hours of fermentation, punch down the dough.

After 4 hours, transfer the dough to a work surface.

Roll out the dough into a sheet.

Roll the dough into a log, pinching after each turn.

Fold in the sides and pinch the dough.

Pinch the seam closed, tuck under, place on a baking sheet seam-side down, cover with plastic wrap and a towel to prevent drying out. Let rise at room temperature for 2 hours.

Lightly dust the bread with flour and score it.

Preheat the oven to 250°C on upper and lower heat, bake for 15 minutes at 250°C, then reduce the temperature to 200°C and bake for another 15 minutes until done. Cool the bread on a wire rack.
