
Bread with a very porous crumb
Description
Homemade baked goods for tea. Many people love very soft bread, so I decided to share this recipe with you. Please note that this bread isn't very tall, but it's precisely because of this that the crumb turns out exceptionally porous. Since this bread is made with sourdough starter, it's also very healthy, especially with the addition of olive oil and black sesame seeds. You can substitute olive oil with another vegetable oil, but it's olive oil that gives the finished bread a pleasant nutty flavor. The baking is ready. Serve at the table.

1. Prepare the starter: place the starter culture into a bowl, add water and mix thoroughly. Add flour and mix. Cover the bowl with plastic wrap and let it sit at room temperature for 8 hours.

2. Dilute the starter with water and mix well. Pour the starter into the bowl of a mixer, add the sifted flour, cover with plastic wrap, and let rest for 30–40 minutes. Add salt, black sesame seeds, and olive oil.

3. Knead the dough in a mixer for 5 minutes at medium speed. Place the finished dough into a bowl greased with vegetable oil and shape into a ball. Turn the dough over, cover with plastic wrap, and let rest.

4. Leave at room temperature for 3 hours. After 30 minutes, stretch the dough by taking one edge, pulling it as far as possible, and folding it to the opposite side of the bowl.

5. Cover the dough with a bowl and let it rest for 30 minutes, then repeat the folding process. Stretch the dough a total of five times. Line the baking pan with parchment paper and grease it with butter. Place the dough into the pan and brush it with butter.

6. Cover the dough with a lid and let it sit at room temperature for 30–60 minutes. Bake the bread in a preheated oven at 200°C for 20 minutes with the lid on, then for another 25 minutes with the lid off.
