
Bread with Coriander
Description
Baking is simple and quick to prepare. Given the varying quality of flour, you may need a little more of it. But add it gradually so as not to overwork the dough. Be sure to let the finished bread rest for the specified time, then its structure will be drier.

Prepare the necessary ingredients.

Dissolve the sugar in warm whey.

Add crushed coriander seeds and minced garlic to the oil. Stir.

In a bowl, combine both types of flour, yeast, and salt.

Add the garlic and coriander butter and the warm whey to the flour mixture. Begin mixing with a spoon. When it becomes difficult to stir, knead with your hands. If the dough sticks to your hands, add wheat flour one tablespoon at a time until you get a soft dough that does not stick to your hands.

Round the prepared dough. Grease the bowl with a thin layer of vegetable oil. Place the dough in it.

Make a cross-shaped cut. Cover the bowl tightly with plastic wrap and place it in a warm spot for 1 hour 30 minutes.

After this time, the dough will rise, but not very much. It will become softer and more delicate. Punch it down.

Grease a baking pan with vegetable oil. Place the rounded dough inside. Make three cuts. Leave it to rise for 40 minutes. Preheat the oven to 230 degrees and place a pan of water inside. Then bake the bread for 10 minutes. After that time, remove the pan of water, reduce the temperature to 180 degrees, and bake for another 25–30 minutes.

Remove the finished bread from the oven, transfer it to a board, and let it cool. Then wrap it in a towel and let it rest for 5–7 hours.
