Rye Bread with Kvass Wort

Description

Tasty baked goods for the whole family. When you can’t buy malt but crave dark, aromatic bread, you can use a kvass wort concentrate—it contains malt and makes the bread delicious. I’m telling you, it can be served with tea or coffee.

    Dissolve the kvass concentrate in warm water. Add honey, salt, and oil. Add 2–3 tablespoons of flour and half of the yeast. Stir and let stand for half an hour until the yeast is activated.

    Add the sifted flour, add the bran, spices, and the remaining yeast. Knead a firm yet tender dough. I knead the dough in a bread machine.

    Let the dough rise in a warm place three times.

    Knead the dough and flatten it with oil‑greased palms into a flatbread. Fold it like an envelope and shape a round loaf.

    Place the karavay on a parchment‑lined baking sheet and generously dust with flour. Cover with a towel and let it rise until it doubles in size.

    Carefully and gently, so as not to crush the bread, make incisions on the surface of the bread with a very sharp knife or blade.

    Place it in an oven preheated to 70 °C, splash half a glass of hot water on the bottom. Let the bread continue to rise in the oven. Then raise the temperature to 200 °C and bake until done. Transfer the finished bread onto a towel, loosely cover and let it cool.

    This bread is tastier when it has rested for a few hours. It is good with any dishes and on its own, with a glass of milk.
