
Rye-wheat bread with kefir
Description
Delicious baked goods for the whole family. You can adjust the ratio of rye and wheat flour to your taste. It will depend on what result you want. If you add more rye flour, the amount of wheat flour will decrease, so the finished bread will be darker. Serve warm or cooled. Perfect with tea.

To make the bread, prepare all the ingredients. Sift both types of flour through a sieve. Sifted flour becomes enriched with oxygen. Thanks to this, the dough will rise better and the baked goods will be airier.

Pour warm water into the dough bowl and sprinkle in the dry yeast.

Pour in the kefir. Preferably, it should be at room temperature or slightly warm. In a warm environment, the yeast will work better.

Pour in all the rye flour. Mix.

Then add the wheat flour. But not all of it. Set aside one quarter.

Knead the dough. Now gradually add the remaining flour. Little by little the dough will become firm and smooth. It should barely stick to your hands. Rub your hands with vegetable oil and gather the dough into a ball.

Place the dough in a bowl, cover with a towel, and leave it in a warm place for 1-1.5 hours.

During this time the dough has increased in size. Punch it down.

Grease the bread pan with vegetable oil. Put the dough in it. Leave in a warm place for another 15–20 minutes. If you don’t have a pan, you can shape the bread simply as a round loaf.

The dough has risen slightly in the pan. Place in an oven preheated to 180°C for about 30–40 minutes.

The finished bread will have risen and turned golden brown. Remove it from the pan. While the bread is still hot, brush it with water. Wrap in a towel and let cool.

Delicious homemade kefir bread is ready! Cut it into pieces and serve at the table.

You can spread it with jam and serve with milk.
