
Wheat-rye bread
Description
The recipe won't take much time. They say misfortune passes by a house that smells of bread. Want to test it? Start baking bread. But don't rush. I prefer to leave the dough kneading to the machine, while I enjoy baking a golden-brown loaf in the oven. Different types of flour and flax seeds will make the bread not only tastier, but also healthier.

Step 1

Load the ingredients into the bread machine pan according to the instructions. Be sure to sift the flour to enrich the dough with oxygen and ensure better rising. Use 3 tablespoons of butter, setting aside one for shaping. Start the dough kneading program. Alternatively, you can knead the dough in a food processor or with a mixer using a dough hook attachment. Of course, you can also knead the dough by hand.

The finished dough is dense and pliable.

Let it rise until doubled in volume. Then knead again and let it rise once more. This is how the dough turned out in the end: definitely tripled in size.

Slightly knead the risen dough, divide it into two parts, and shape two loaves. To do this, stretch the dough with oiled hands into a sheet about a couple of centimeters thick. Then fold the long sides over one another, pressing down each fold. Next, roll the dough into a wide log and shape it into a ball with your hands. Smooth out all seams and tuck them underneath.

Place the bread on a baking sheet; I use a silicone baking mat. Let it rise, then make diagonal slashes. Put the bread in an oven preheated to 50°C (122°F), and splash a glass of hot water onto the oven floor. Let the bread rise with steam until doubled in size. Then bake at 200°C (392°F) until golden brown. To check if the bread is done, remove it from the oven and tap the bottom. A ready loaf will produce a hollow sound and will feel very light.

After baking, the bread should be "washed" with cold water and loosely covered with a linen towel. Let it cool completely and rest overnight. This allows the bread to fully develop its flavor.

Can you say how many servings are in a loaf of bread? Personally, I can't. The bread is so delicious that almost half of it disappears right away, just with milk.
