    Prepare the ingredients.

    First prepare the sponge. To do this, dissolve 2 grams of yeast in 200 ml warm water and add 250 grams of flour.

    Mix the sponge with a mixer on low speed, cover, and place in a warm spot to ferment for 2–3 hours.

    The fermented sponge has increased in volume by at least twofold.

    Transfer the sponge to a bowl for kneading the dough. Dissolve the yeast in warm milk, pour it into the sponge, add salt and flour, knead the dough on medium mixer speed, and knead for 3–4 minutes.

    Cover the dough with a lid and place it in a warm place to rise for 1 hour.

    After an hour, turn the dough out onto a work surface lightly dusted with flour, round the dough, and leave it to rise for another 45 minutes.

    Roll the dough into a sheet, whisk the egg with sugar, pour it onto the dough, add the flour, and knead the dough by hand for 5–6 minutes.

    Roll the dough out into a sheet again, add clarified butter, and knead for another 2–3 minutes until the dough absorbs the butter.

    Shape the dough into a round loaf and let it rise for 45 minutes.

    After 45 minutes, preheat the oven to 220°C and use kitchen scissors to score the dough. If you like, you can brush the bread with milk. Bake the bread for 7 minutes at 220°C, then reduce the temperature to 180°C and bake for a further 40 minutes.
