
Bread with Baking Soda and Kefir
Description
It pairs perfectly with tea and coffee. When kneading the bread, pay attention to the amount of flour. Do not add extra flour if the dough sticks to your hands. Dust your hands with flour and dust the work surface, knead the dough until it reaches the right consistency. Do not expect a "fluffy" middle from the finished bread. The texture turns out dense, slightly crumbly, with a faint taste of soda. Serve warm or cooled. Perfect with tea.

Prepare the necessary ingredients.

Sift the flour with baking soda into a bowl.

Add salt, seeds and soft butter. Thoroughly rub the butter with the flour.

Add warm kefir and knead the dough.

Do not overmix the dough. It should turn out dense but soft.

Line the baking pan with parchment paper and grease it with butter. Shape the dough into a round, lightly roll it out with a rolling pin, aiming for a 20 cm diameter. Transfer it to the pan. Using a sharp knife, make deep cuts (depth 0.5 cm). Place it in a preheated oven at 180 °C for 45–50 minutes.

After the time is up, check the bread with a dry stick and tap the crust. If the sound is dull, the bread is ready. If you are unsure, lower the heat to 150 °C and hold for another 10 minutes, but do not overbake; the specified time is usually sufficient. Cool the bread.
