
Bread with brine in a bread machine
Description
It is perfect with tea and coffee. I suggest baking the bread in a bread maker. It saves a lot of time. For this loaf, I used brine from fermented cabbage with tomatoes. It has a pronounced tanginess. A slight tang was also passed on to the bread, but it did not spoil its taste at all. You can use brine from any fermented vegetables. If you don’t have whey, replace it with water. You will get an excellent lean version of bread. It can be served with tea or coffee.

Prepare the necessary ingredients.

In a bowl, mix warm brine and warm whey (36–38 degrees). Add the yeast and sugar.

Stir thoroughly with a spoon until the yeast is completely dissolved.

Pour the yeast mixture into the bread machine bucket. Add the remaining ingredients. Select the "French Bread" program, time 4 hours. Press "Start." For the first 20 minutes, the ingredients will warm up, and then kneading will begin. Watch to make sure the dough forms into a soft, uniform ball.

As soon as the dough has formed into a ball, close the lid and wait for the process to finish.

At the end of the program, after the sound signal, remove the bread from the bucket. Transfer it to a towel. Let it cool well. Ideally, let it rest for 6–8 hours.

Serve the cooled bread with your favorite dishes.
