Prepare all the ingredients.

Pour the psyllium into a deep bowl and add room-temperature water. Whisk thoroughly until no lumps remain. The mixture will begin to thicken right away.

Pour in the apple cider vinegar, olive oil, and Jerusalem artichoke syrup. Mix everything together.

In a separate bowl, mix chickpea flour with rice flour and cornstarch. Add baking soda and salt.

Add the liquid psyllium mixture to the dry ingredients in the bowl. Knead until the dough is smooth and uniform. At first, mix with a silicone spatula or spoon; then finish kneading by hand on the work surface.

If the dough sticks to your hands, sprinkle in rice flour. The dough should be pliable and not stick to your hands.

Shape the resulting dough into a loaf or place it in a baking pan. Grease the pan with oil or line it with parchment paper.

You can sprinkle the top of the bread with seeds. Bake the bread for about 40–45 minutes in an oven preheated to 180°C.
