
Millet bread with pumpkin

Prepare all ingredients.

Soak the millet in advance overnight or for 1 hour in hot water.

After that, rinse thoroughly, drain in a colander, and let the excess water drain off.

Peel the pumpkin, remove the seeds, and cut into cubes.

Steam the pumpkin until tender.

In a blender, combine millet and pumpkin, sugar, milk, and apple cider vinegar.

Blend until smooth.

Pour the resulting mixture into a deep bowl. Add psyllium, salt, all the spices, baking soda, and baking powder.

Mix everything well so that no lumps remain. The dough will immediately become thicker and denser.

Then add the dried fruit and mix again.

Put the dough in a parchment-lined baking tin and smooth the surface evenly. Bake the bread in an oven preheated to 180°C for approximately 70–90 minutes.
