Millet and Green Buckwheat Bread

Description

Pairs perfectly with tea and coffee. This bread can be made from any kind of cereal grains, seeds, and whole grains. For flavor, you can use any spices and aromatic herbs. Serve cooled or slightly warm.

    Prepare the ingredients for baking the bread. Rinse the green buckwheat and millet and soak them in cold water, preferably overnight. You can grind the spices with salt in a mortar. Set aside some of the seeds for sprinkling on the bread.

    Drain the excess liquid from the buckwheat and millet and put them in a blender. Grind the grains. The bread’s texture depends on how finely you grind them. You can grind the grains into a smooth, uniform mixture or leave small bits of whole kernels. Transfer the mixture to a bowl.

    Place the flax seeds in a blender, pour in a glass of water, and blend until smooth.

    In a bowl, combine all the bread ingredients: ground green buckwheat groats, millet, flax seeds, pumpkin seeds, seeds, chia, turmeric, coriander, cumin, salt, baking soda slaked with lemon juice, and coconut oil.

    Knead the dough, mixing thoroughly so that all ingredients are evenly distributed.

    Place the dough in baking pans. Sprinkle the top of the dough with the reserved grain mixture. Bake the bread in an oven preheated to 180°C for 45–50 minutes. Cool the finished bread on a wire rack.
