Description

If you are going on a picnic, or suddenly find that there is no bread at home, this is the very reason to try making Azerbaijani bread “Yukha.” Because it is very quick, and also convenient to take with you on a picnic. It is very easy to make, and a step-by-step recipe will help you do it. Serve cooled or slightly warm.

Prepare the ingredients.

Dissolve the salt in warm (not hot) boiled water.

Mix the sifted flour and yeast.

Pour half of the dry mixture into a bowl of water and mix. Add the second half of the flour and knead the dough.

Cover the dough with plastic wrap and leave it like this for 20 minutes.

Divide the dough into 5–6 parts, shape them into balls, and cover with plastic wrap to prevent drying out.

Roll out the dough into a very thin flatbread, 1.5-2 mm thick.

Cover the rolled-out flatbreads with a napkin until baking, as they dry out very quickly. At the same time, preheat the oven to 220 degrees. Place a baking sheet upside down in the oven; it should heat up as well.

Being careful not to burn yourself, place the flatbread on a baking sheet and bake on both sides until lightly browned.

After baking, sprinkle the flatbreads with water and cover them with a cloth; you can simply cover them with a slightly damp cloth. If you do not do this, the flatbreads will be very brittle, but they will still be tasty.

The flatbreads turned out very tasty. You can eat them just as they are, breaking off pieces with your hands, or you can wrap any filling in the flatbread.
